INTOLLERANZE: un segno da non sottovalutare
Semi antichi, per tornare a tollerare i frutti della terra

L'aumento significativo di intolleranze alimentari è un chiaro segno dei tempi. L’uomo ha spinto lo sfruttamento della terra ad un punto critico: il cambiamento climatico e le colture intensive con l’uso di pesticidi e prodotti chimici arrivano sulle nostre tavole come un boomerang...

Si è stimato che delle 10mila specie vegetali usate per produrre cibo e mangimi oggi ne vengano usate solo 12 per fornire l’80% del cibo di origine vegetale.
Il Treno Verde di Legambiente e Ferrovie, durante la tappa ad Arezzo, ha visto la presentazione del progetto LIFE SEMENte parTEcipata, promosso dal dipartimento di Scienze delle produzioni agroalimentari e dell’ambiente dell’Università di Firenze, Firab (Fondazione Italiana per la ricerca in agricoltura biologica e biodinamica), Navdanya International, Regione Marche e Provincia di Grosseto.
L’obiettivo è reintegrare l'utilizzo di semi "antichi" per riuscire ad ottenere specie vegetali che siano più resistenti ai cambiamenti climatici; i semi antichi sono infatti più forti, necessitano di minori attenzioni e aiutano a mantenere la fertilità del suolo.
Il segno è forte, anche la nostra attenzione deve esserlo, perchè è dimostrato il legame tra alimentazione e vari disturbi o vere e proprie patologie:
intolleranze, allergia, celicahia, gluten sensitivity, diabete, stanchezza cronica, fibromialgia, psoriasi, autismo, artrite, Alzheimer e Parkinson fino ai tumori.
